Rosemary Roasted Potatoes
A simple and savoury potato side dish. Thanksgiving potatoes that don't take too much time and are perfect for a dinner for two.
- 550 g New Potatoes Or large potatoes cut into large chunks
- 3 cloves Garlic Finely diced
- 2 sprigs Rosemary about 1 Tbsp diced
- 2 Tbsp Olive Oil
- 1/2 tsp Each Salt & Pepper
Heat the oven to 375F
Combine the potatoes, diced garlic, diced rosemary, salt, pepper and olive oil in a small roasting pan. Stir to get them all coated, and spread into a single layer.
Roast for about 25 minutes. Stir and check for doneness by piercing with a fork. They should be crisp on the outside and soft on the inside. And a nice golden colour is good too.
