Happy Thanksgiving Everyone! With so many people stuck at home this year, unable to gather in large groups, lots of folks are looking for two person meal ideas. It can seem daunting to cook a full thanksgiving dinner for only two people. Since we’ll be only two people in our house, I thought I’d put together a perfect collection of recipes. They are smaller than the standard thanksgiving meals, but will still feel special. Plus, you’ll have some leftovers too! (One of the best parts of the big meal!)

The perfect Thanksgiving menu for two people. Exactly what we need for this very strange and isolated holiday.

1. Simple Charcuterie Board for Two

We like to make our Thanksgiving day a very relaxed one. Lots of movies, snuggles, together time, and of course food! Having a simple charcuterie board laid out is a great way to feel a little classy while you’re snacking in your PJs.

2. Kale & Pumpkin Salad

Once meal time begins, I love to start things off with a bright, fresh salad. Thanksgiving meals can be pretty darn heavy. (And personally, my digestive system really appreciates the roughage.) This salad is full of colour, and autumn flavours. You can fully prep it in advance, and keep it in the fridge for a day or two, without the dressing. Perfect for timing the meal!

3. Rosemary Roasted Potatoes

It’s not Thanksgiving without potatoes! Well, at least not in our house. Don’t get me wrong, I love mashed potatoes as much as the next gal. But this year I use any excuse I can find to dress things up a bit. Garlic and fresh rosemary make these potatoes extra dreamy, from their crisp outside to their fluffy soft inside.

4. Baked Sausage Stuffing

Since this menu doesn’t have a turkey, we have to do our stuffing a different way. Baked stuffing can get a bad rep, but with good ingredients and flavourings it can be just as delicious as the classic. We use spicy Italian sausage in ours and it add a whole other level of yumminess to the dish.

5. Stuffed Pork Loin

For the main event we’ve got a out of this world stuffed pork loin. Smaller than a turkey, but still packed with autumn flavours, and big enough for some leftovers the next day! And with the buttery cider pan sauce, you won’t be missing the turkey at all.

6. Classic Pumpkin Pie

And finally, the perfect Thanksgiving dessert, Pumpkin Pie! Topped with a bit of ice cream, you’ll be one happy camper by the end. Time to curl up on the couch with a glass of wine, or a mug of hot chocolate and be thankful for everything that we have. (And eat some pie)
