As we’re coming up to Thanksgiving in this very strange year, I know a lot of people who are celebrating differently. In our house, that means just the two of us. With only two people eating it can seem like a lot of excess work and food to do up a full Thanksgiving meal. So this week, I’ve decided to share some really great menu options for having a lovely and special meal for only two people. While still enjoying the food, and of course, having leftovers. I’ve got a whole menu planned out with easy and delicious recipes. We have already started with a Simple Charcuterie Board for Two, and a Kale & Pumpkin Salad. But no holiday meal is complete without potatoes!

Today we are getting into the rich and savoury stuff, with potatoes!

Seriously, what is Thanksgiving without potatoes? I know mashed potatoes are the classic go-to. And don’t get me wrong, I love a good mashed spud. But it’s 2020, and things are crazy, so we’re trying something a little different, to remind us that we need more than just the ordinary! Okay, that’s a bit heavy for potato talk, but you get it. 

Rosemary Roasted Potatoes

Since there’s a pandemic, I’m going to keep pushing the need to shop as local as you can. We eat a lot of potatoes at this time of year, because they’re in season, so if you can , find a farmers market. Or a grocery store that sources from local growers. I use new potatoes in this recipe because there were some at my local market. But if your local growers are all out of new potatoes, just use regular spuds chunked up into “new potato” sizes. 

Cooking for two can sometimes present weird problems that you might not think about. For example, when you’re only making two portions, you don’t really want to make a mess of any huge dishes. If you don’t already have some smaller sets of dishes now is a good time. Again, if you have a source for locally made cookware, do your best to shop there. Otherwise here is a link to a nice set of ceramic baking dishes that I like, and some glass ones I like. Doing more dishes isn’t the best, but when you’re making a meal that involves several parts, it’s good to have a few options of different cooking vessels.

Now, on with the potatoes!

Rosemary Roasted Potatoes

A simple and savoury potato side dish. Thanksgiving potatoes that don't take too much time and are perfect for a dinner for two.
Prep Time 10 mins
Cook Time 35 mins
Total Time 45 mins
Course Side Dish
Cuisine canadian, French
Servings 2 People (with leftovers!)

Ingredients
  

  • 550 g New Potatoes Or large potatoes cut into large chunks
  • 3 cloves Garlic Finely diced
  • 2 sprigs Rosemary about 1 Tbsp diced
  • 2 Tbsp Olive Oil
  • 1/2 tsp Each Salt & Pepper

Instructions
 

  • Heat the oven to 375F
  • Combine the potatoes, diced garlic, diced rosemary, salt, pepper and olive oil in a small roasting pan. Stir to get them all coated, and spread into a single layer.
  • Roast for about 25 minutes. Stir and check for doneness by piercing with a fork. They should be crisp on the outside and soft on the inside. And a nice golden colour is good too.
